Feb 11-23rd recipes

Feb 11th ( I use BBQ seasoning for the chicken and normally cook it for 35 to 45 minutes at 450 degrees. Every oven is different so make sure you temp the meat before you serve)


Feb 12th I like to buy the apple wood smoked bacon pork roast that I can normally find at Walmart

Feb 14th I will season the steak with Montreal steak seasoning


Feb 15th I will most likely use either lemon pepper seasoning for the chicken or beer can chicken seasoning except for our youngest wants garlic salt on hers.


Feb 16th I will make the noodles on the side so that there is no cross contamination for Taylor

Feb 20th BBQ beef CROCK POT low 8 high 4 to 5 hours

2 Lb chuck roast

1 1/2 cups of ketchup

1/4 cup brown sugar packed

1/4 cup port wine

2 TBSP Dijon mustard

1 TBSP Liquid smoke

1/4 tsp garlic powder

Spray crock pot with non stick spray. Mix sauce ingredients together.

Add Roast into the pot and pour sauce on top. After meat is done cooking I shredded it with my hand mixer, but you can use a fork. Let meat sit for 25 to 30 minutes before serving. We used hamburger buns to eat this

Feb 22nd Pizza


Feb 23rd CROCKPOT MEXICAN CORN SOUP


1 Lb boneless chicken thighs

2 cloves minced garlic

1 cup of chicken broth

2 (14.5) cans cream style corn

1 can mexican corn

1 can black beans

1 (4oz) green chilies

2 TBSP chili powder

1/2 Tsp paprika

1 1/2 ground cumin

4 cups Monterrey jack cheese

2 cups heavy cream


Spray crock pot with non stick spray. Add chicken, garlic, chicken broth, cream corn, mexican corn, drained and rinsed black beans, un drained green chilies, chili powder, paprika, and cumin. Stir well. Cover and cook on high 3 to 5 hours or low for 4 to 6 until the chicken shreds easily.

Remove chicken and shred.

Add cheese and heavy cream

Return chicken and mix.


Crunchies

8 Tortillas

non stick spray

Ranch powder


pre heat oven to 400

use pizza cutter to cut up tortillas

place tortillas on baking sheet and spray with non stick spray then sprinkle ranch powder on top. Bake for 5 to 10 minutes.
