Recipes Feb 25th- March 9th

Feb 26th We will use pre made patties and then use all the toppings except using lettuce for a bun instead of bread.

Feb 28th Chicken Bacon Ranch Casserole

1 LB penne pasta ( cook and drained)

2 cups of cooked and shredded chicken

1 jar (22oz) prego Alfredo sauce ( I used home style)

1/2 cup of ranch dressing

6 slices cooked and chopped bacon

2 cups Monterrey Jack cheese

Heat oven to 350 degrees

Grease a 9X13 pan

In a large bowl place drained pasta, chicken, Alfredo, and ranch. Stir to combine

poor mixture in pan and spread evenly.

Sprinkle bacon and cheese oven the top then top with cheese .

Bake 15 to 20 minutes or until bubbly.

let sit for 5 minutes before serving.


March 1st Pasta Fagoli

1 tbsp olive oil

1 onion chopped

2 cloves of garlic

1 carrot peeled and chopped

1 stalk of celery chopped

1lb ground sausage

1 tbsp Italian seasoning

1 (15oz) can crushed tomatoes

3-4 cups chicken broth

1 can cannelloni beans

1 cup ditalini (pasta)

Parmesan cheese (fresh) for serving


IN pan add olive oil, onions, Carrots, and celery. Cook for 3 minutes.Add garlic and cook until fragrant ( about 30 seconds).


add Sausage to pot crumbling as it cooks ( cook until no pink) stir in seasonings, tomatoes, and chicken stock


Bring to a boil. Reduce heat to simmer for 30 minutes. Stir in beans and pasta. You can add extra stock if there isn't enough liquid. simmer for 6-8 minutes or until pasta is tender.

Serve hot and top with fresh Parmesan.

March 3rd LEFTOVERS (WOOOOO)


March 4th 15 minute chicken teriyaki

3 lb chicken breast ( cubed)

2 TBSP sesame seed oil

Sauce

1/2 cup of honey (Spray measuring cup with non stick spray first)

1/2 cup soy sauce (gluten free)

4 TBSP apple cider vinegar

1 tsp ground ginger

4 cloves of garlic

2 TBSP corn starch/water mix

Brown chicken in sesame seed oil. (2-3 minutes per side)

Mix sauce together and add to chicken. Stir continuously until sauce thickens and coats chicken.

serve with rice and veggies.


March 5th BLT ( might even add avocado)


March 6th. will buy salad kit so i just have to use pre cooked chicken


March 7th Keto chicken Parmesan casserole

5 cups cubed cooked chicken

1 cup no added sugar marinara sauce

1 cup grated Parmesan cheese

1 1/2 mozzarella cheese

1 oz pork rinds

1/2 tsp dried basil

pre heat oven to 350 degrees


Lightly grease 8X8 pan. Spread marinara on the bottom, then chicken, cheese, pork rinds, then basil on top.


Bake 25 minutes until cheese is bubbly and melted


March 8th Chili


1 can Kidney beans (drained and rinsed)

1.25 LB ground beef

6 oz tomato paste

3 tomatoes (chopped)

1 red bell pepper (chopped)

1/2 cup onion (chopped)

2 celery sticks chopped thin

2 Tbsp cumin

2 tsp chili powder

2 tsp salt

1 cup water ( add more if needed)


Brown meat in frying pan. Drain fat and add salt. Add onion and peppers to pan and cook 1 to 2 minutes


Combine cooked meat, onion, peppers, celery, tomatoes, tomato paste, and water into large pot. Stir in spices and bring to a boil and reduce heat to low add beans and simmer 1 to 2 hours ( stir every 30 minutes).

I highly recommend doing a meal prep and pre cook chicken during the weekend and either freeze it and defrost or keep out for that week so you don't have to rush when meals say pre cooked chicken.
